It depends entirely on the oscillator/synth design, but general practice in analog synths is to have a sample-and-hold circuit for the pitch CV which latches the correct value when a key is depressed and holds it after (so you don't get a sudden change in pitch during the release phase.) I you are buying a kit that already has a MIDI Interface, you are all set. If you are looking at kits that don't have MIDI interfaces, why? In a hardwired synth it doesn't make that much sense...where would you send three or four filter outputs? To the three or four inputs on a switch to the VCA? i need to meet some people with superfluous synths to give away. 
I once gave away a Korg DDD-5 because I never used it, and couldn't figure out the sequencer anyhow.
Now someone is selling a DDD-1 locally on Kijiji and I'm severely tempted. Wonder if paying it forward really works?
