My first (and only) Moog moment was 5 minutes of noodling on a Minimoog at a lecture on electronic music presented by Dr. Bob Moog himself. He was very gracious and laid back and was amused that I admitted that I couldn't play myself out of a paper bag. But that big Moog sound made a big impression.

Every Korg Triton I've ever seen does indeed have a joystick or paddle to the left of the keyboard that controls pitch and modulation. I've always enjoyed a very sublime Minimoog solo by Patrick Moraz on "In My World" by the Moody Blues. He's actually playing behind the vocals on the verses, but it's subtle and effortless and elevates the song beyond the usual fluff.
