I tried the portamento thing, but really couldn't perceive a difference in rate. I am not saying it wasn't there, just that I couldn't perceive it.

B3 sounds is a classic sound that any 2 oscillator subtractive synth can make. That's why we make them. Cos why not?

That's right. I love to make those standard keyboard sounds on analogue synths. I promise - when I finish my current synth-in-the-works, the first preset will be fake piano

It actually makes sense to redo all the common bread 'n butter sounds with a new synth. Because you already know how such sounds should be made (which parameters to use) it's only a matter of locating them in a new synth. So, if something doesn't go right in this process, at least you know you can keep the ideas behind the sound design out of the equation.
And I do it too, of course. If I dive into a synth, the first things on my list are a decent piano, a moody mellow Rhodes, a Blade Runner horn, a bright pad, a mellow pad, and some acoustic wind instruments. Even if I never really use those sounds in a production, they're part of me learning a new synth.

The first thing I always create when I try a new synth is the Jump sound, and swirly phased JM Jarre strings (if the synth has a phaser effect that's my measurement for how good it is)
There is quite a big range of Hammond sounds you can do with just 2 oscillators, so it's a good exercise to get to know the synth anyway. You can apply certain envelopes to get the percussion click in various ways, accent the overtone or not, play with the filter, get some "rock organ" distortion, make leslie effects..it's all there. If it has multiple oscillators/suboscillator you can even go into church pipe organ territory.

Yep Yamaha nailed that Smallstone emulation in the XF. There's also a very good SS clone in the Jupiter-80. Just love that swirly sound and the "wave crashing" at the bottom. Almost no other phasers do that.
What I usually do when I try out a synth in a store is figure out how to go back to basics/init patch (just a couple sawtooth nothing else), highpass filter a sawtooth, and test the phaser effects on that. Sometimes it's insta-Jarre, sometimes not.
