I've already told you what I can make out - it says "YAMAHA ?X?" which means it's (most likely) either a DX7 or a KX88. The video is poor and there are no clear shots.

Do we know for sure they are all ACB? Only the JP-08 explicitly states ACB modelling, and the JP-08 is more expensive than the other two. This guy had it about right in April... if we're to believe him, they're analog modeling. If it's an evolution of the Aira tech, and they're modelling the old Roland polys in the same detail as the SH;s they've been doing, I'm all for it. Particularly if there are plugin versions of these as well.....

It's possible. The entire Sub37 synth board is about 5"x6". It could easily be stacked. The Sub37 is two voices, and is paraphonic so only one filter, one set of EG's etc... so that's significantly less circuitry... My old DX7S did transmit up to 127, but you had to hit fairly hard to get it up there irc.
If you use something like Logic, it's trivially easy to adjust, compress, expand, scale and offset incoming velocities in the MIDI thru parameters (or less trivially in the environment).
