Definitely. I barely use MIDI now, though still use analogue step sequencing - not always for pitch, mind, and not always clocked in sync with anything else. Playing and then editing audio gives quite different results. Portishead make good use of that approach I think.

I can haertily recommend the Strymon El Capistan too. A really good delay, that. I tend to ignore the built-in (virtual) spring reverb in favour of a Boss FRV-1, which is a pretty good (virtual) spring reverb pedal... keep meaning to once again get an actual spring reverb, but hey.

Sounds like frequency modulation to me: one oscillator modulated by another, the (silent) modulator being modulated in frequency itself by a moderately-paced sample and hold random LFO. I expect that would be easy enough in software.
