I own an Apple //e in working condition and I would really like to make some music with it, but I have no idea how. What can I do? Any software available?

You Should totally try to find a Roland CMU 800 which is pretty much made for the apple IIs That would be slick. Theres some info on this site about it Other than that, there's probably some old school midi sequencing software or something for them shits

I don't think II line got much sauce for music wanking until the IIgs, outside of the aforementioned CMU and some patch librarian/editor software.
