Can anybody explain to me how this works? I thought that the envelopes would reset at the start of each new note anyway?

With envelope reset on, the envelopes start at 0 at the start of each new note.
With it off, the envelope starts at whatever level it was at from the last note it played (if it's still trailing off on a long release, for example). Handy for legato playing in mono mode, where you want the first note to attack gradually but not subsequent notes.

It can be cool to leave it off so that you can control the initial volume or filter amount of a note by varying how long a gap you leave from the previous note.
